The hill of Corton is home to the only great red wines of the Côte de Beaune. It’s a shame that Pommard didn’t choose to promote the Rugiens and Volnay or the Taillepieds. The term “Chaumes” has the same origin as “Charmes”: it indicates an old plot of land that lay fallow before becoming a vineyard. These place names would do well to inspire us as we rethink our agricultural practices.
